First off, I’d just like to blame thank Edward Halim for this spark of inspiration. He sent me a link from Pinterest this past Sunday asking me to make him Homemade Snickers. Side note: you should know, if anyone (I know personally) asks me to bake/cook them something, 99.99999% of the time I will do it. Not just because I love doing it but because I love a challenge and more than anything, I love conquering a new dish and saying to the world “FUCK YES, I MADE THAT! AND IT TURNED OUT FUCKING DELICIOUS!”
So on Monday, I looked at the recipe he sent me and set out to make Homemade Snickers after I got home from work. Now, you can blame my self diagnosed ADD for this but I saw a recipe for Peanut Butter Pretzel Truffles and decided to try it out before I made the Snickers. I apologize, Edward, as I did renege on my promise that I’d make you Snickers that night but this recipe looked magnitudes easier and more fun to make! And plus, I’m a sucker for anything that has the consists of chocolate and pretzels. Since I still had the Homemade Snicker’s request to fulfill, I decided to declare this week PROJECT CHOCOLATE!
After work I went out and purchased a VERY large bag of milk chocolate chips, some peanut butter and a bag of pretzels and got started.
Recipe was adapted from Eating Well.
For Peanut Butter Pretzel Truffles you will need: 1/2 cup Natural Peanut Butter, 1/4 cup finely chopped pretzels (I ran mine through the mini food processor) and 1/2 cup of milk chocolate chips.

Combine the peanut butter and finely chopped pretzels into a small bowl and freeze for about 15 mins. Line a baking sheet with parchment paper and roll into 20 balls (about 1 tsp each). I made mine a little bigger so I only had about 12 balls. Put back in the freeze for about an hour to harden.

Melt chocolate in microwave or on the stove. I threw the chocolate chips in the microwave for about 40 seconds. Roll balls into melted chocolate and set back on the parchment paper (I melted an additional 1/2 cup of milk chocolate chips and rolled the balls into the chocolate a second time to cover up any bald spots). Put back in the freeze for 20 minutes or until chocolate is hard.
And there you have it! Chocolate peanut butter pretzel truffles. So easy, right?

I still had a bag full of pretzels and some chocolate left over so I decided to make chocolate covered pretzels too.

Since I live alone and I’m trying to watch my girlish figure, I threw these under my cake stand so when my friends come over, I can get them nice and fat!
